Because yes, all of the above have happened. Let me try to revisit the terror of December 22, 2013 when I, home alone and clearly bored, attempted a rather complex Paula Deen mint brownie recipe. I know, sounds simple enough- that’s what I thought too. WRONG. This was when I learned that substituting ingredients in baking recipes, specifically Paula Deen mint brownie recipes, is not a good idea. “I don’t have unsalted butter/even know what that is, BUT I have margarine.” No, just no. I did several other things wrong, I’m assuming, because the end result was more of a pudding than brownie. Also, it should be noted that I realized the indoor cat was missing while the brownies were (supposedly) baking. This sent me on a wild hunt outdoors to find the cat. After I found her, I ran back to the door to leave it open, hoping she would run inside…… to the now smoke-filled kitchen because my brownies pudding was literally burning and erupting like a volcano in the oven. I’ll blame the smoke and repressed memories for not remembering the rest.
Any who, you will be pleased to know that my 2016 baking is far more successful (and safer) than 2013. I found this recipe on Pinterest (naturally). These cookies are super tasty, and that’s coming from a dessert-obsessed human. And this probably goes without saying after the story mentioned above, but they are super easy to make! You don’t even need a mixer- which reminds me that I am pretty sure I skipped that part in the 2013 fiasco as well..

Just made these tonight!! I added almonds and a drop of agave ..amazingggg!!!! I plan to make these weekly for a healthy, guilt free treat!!! I wish more recipes were simple and completely natural like this one. Butter is so unnecessary ..

I love that you just set it down to see what would happen! Too many people get the wrong idea if you mention the word healthy and it alters their opinions and taste! This dough looks divine!

LOL at unsalted butter. I’m working on a recipe for flourless, eggless, maple pecan pancakes that actually taste good, and it’s definitely a work in progress… here’s to more baking in the second half of 2016
